Join us on Saturday 9th November for a special masterclass in our nomadic wild kitchen and learn some of the key skills you need to cook over fire. During this off-grid workshop session we will teach you how to prepare and cook an impressive three course meal using wild ingredients. The event will take place at a woodland location just outside Lewes, East Sussex.
Interactive activities include wood selection, axe skills and firelighting, fire management, temperature control, foraging ingredients to create your dishes, preparing small game and other wild foods, cooking techniques, presentation skills and even some tips on wine pairing!
The workshop starts at 10am with tea and coffee by the fire during a quick briefing and tour of our wild kitchen. We kick things off with wood selection, axe skills and firelighting. Learn how to start fire from a spark then build and maintain it using the essential tools of the trade and the right choice of wood.
Once the fires are crackling we’ll head out on a foraging walk to find some of the ingredients we will need to prepare the menu. Depending on what is around this might include edible fungi, wild herbs, fruits and berries. Once we arrive back at base camp we’ll be prepping some game for the pot. Learn how to skin, gut and joint small game and how prepare fish ready for cooking.
At the end of the workshop we will gather around the table to sample the results of your cooking efforts. You will also enjoy a short wine tasting session alongside some tips on food pairing and menu planning.
Participants will need to make their own way to the wild location. Free onsite parking will be provided. Full details of the location and travel advice will be provided once your booking has been confirmed.
We provide all the equipment you would need for the workshop but if you have your own gear - chefs knives, axes etc - and would prefer to bring that along and use it then please do. This course is not suitable for children/under 18s.
